200 gr. angel hair
400 gr. shrimps
300 gr. fruit salad compote (it included pear, peach and cherry in syrup)
1 green pepper, julienned
4 broccoli florets
1 carrot, julienned
1 tsp salt
Pinch of ginger
Pinch of onion powder
Pinch of garlic powder
2 tbsp peanut oil
I was in a hurry, so I baptized broccoli, chopped pepper and copped carrot in boiling water for 5 minutes. In this way the vegetables became soft, so as to cook easier in the skillet.
Take a skillet and pour the peanut oil in medium-high heat. Throw the vegetables and stir fry for 4 minutes or longer if you want them soft. Add the salt, ginger, onion powder and garlic powder while sautéing them. Pour the compote and lower the heat to medium-low. Let cook for 10 minutes. Five minutes before the end, add the shrimps.
In the meantime, put water in a pot in high heat. When the water starts boiling, throw the angel hair pasta. Let it cook for two minutes and drain them.
Now at this point you can do one of the following: either throw the angel hair in the skillet and toss with the sauce, or pour the sauce over the angel-hair pasta in each dish.
