Low fat soup recipes: artichoke soup
Artichoke is a low calorie nutrient rich vegetable. It contains more than 15 essential nutrients and only around 25 calories in one medium artichoke. They are an excellent source of fiber and rich in antioxidants. Artichoke improves the digestive system, lowers cholesterol levels and they are naturally fat free. Choose artichokes that are dark green, feel heavy and have tight leaves and wash well before using. Apart from soups artichokes can also be made in many interesting ways.

| Chopped Onion | 1 |
| Shredded Chicken | 200 Gms. |
| Boiling Water | 750 ml / 1 pint |
| Chopped Garlic | 1/2 pod |
| Olive Oil | 1 Tsp. |
| Cinnamon Powder | 1 Tsp. |
| Soya Sauce | 1 Tsp. |
| Skimmed milk | 1/4 pint/ 125 ml. |
| Chopped Parsley | 1 Tbsp. |
| Salt and Pepper | To Taste |
| Dried Sage | 1/2 Tsp. |
Method :
- Slice artichokes and boil in water with the onions till tender.
- Blend well, and pour into a saucepan with the milk and let it boil till thick.
- Season with salt and pepper to taste.
