I was going to write on article on Cold Japanese Ramen/Hiyasi Ramen/冷やしラーメン when I realized I would have to introduce one main element first, namely Chyashyu (in Japanese) or Char Siu (in Chinese).
Therefore, here is the basic Japanese-style Char Siu recipe before I can introduce the one on Hiyashi Ramen!

1. Put water in a large donabe pot or an electric skillet.
2. Add chicken stock powder, hot bean paste, soy sauce, and sake and bring to a boil.
3. Turn down the heat to low and add vegetables and simmer until softened.
4. Further, add tofu, cellophane noodles, and gyoza and simmer until cooked through.
5. *Adjust the flavor with soy sauce as you like.

Mix miso, sake, and sugar in a small cup. Put 1/2 Tbsp of butter and a portion of green bell pepper, carrot, and enoki on a large sheet of aluminium foil. Place a piece of salmon on the top. Spread a portion of miso mixture on the salmon. Fold the foil and seal the edges. Make four foil packets. Place two foil packets in a large skillet.
