Being the cafe sua da lovers that we are, cans of condensed milk are never hard to find in our pantry. In fact, we fill a squirt bottle with condensed milk for quick and easy access each morning to sweeten our Vietnamese iced coffees.
Banh Cuon ( translated as Steamed Roll Rice Pancake, or Stuffed Pancake ) is a favourite dish of many people in Vietnam and mostly eaten for breakfast. It is a crêpe-like roll made from a thin, wide sheet of rice flour filled with ground pork (thịt heo xay), minced wood ear mushroom (mộc nhĩ băm nhỏ), and other ingredients. Sides for this dish usually consist of fried shallots on the top, Vietnamese pork sausage (chả lụa), sliced cucumber, eryngium or coriander (rau mùi) and bean sprouts, with the dipping sauce called nước chấm (made from origninal fish sauce mixed with boiled water, sugar, vinegar or lemon, and chili peppers).
Last week, we posted our nem nuong recipe and emphasized its versatility and used it for nem nuong sliders and bun nem nuong and banh mi nem nuong. Our other favorite way to eat nem nuong is nem nuong cuon (spring rolls with grilled pork patties). We defrosted frozen nem nuong the night before in the fridge and just had to get all the fresh veggies and herbs. Now you know why we always have nem nuong in our freezer–delicious and refreshing nem nuong cuon can be made in no time.
